Food hygiene training courses

Schedule 1 chapter X [regulation 4 (2) (d)] of the Food Safety (General Food Hygiene) Regulations requires that:

"The proprietor of a food business shall ensure that food handlers engaged in the food business are supervised and instructed and/or trained in food hygiene matters commensurate with their food activity."

The industry guides give guidance on the level of training which different types of food handlers should receive see Food Hygiene Training & Guidance.

These regulations will be replaced in January 2006 by the Food Hygiene (England) Regulations 2005 which bring into effect EU regulation 852/2004 requiring :

Chapter XII

Food Business operators are to ensure:

1. That food handlers engaged in the food business are supervised and instructed and/or trained in food hygiene matters commensurate with their food activity
2. That those responsible for the development and maintenance of the procedures described in article 5 (1) of this regulation or for the operation of relevant guides have received adequate training in the application of HACCP principals.

Tandridge District Council now offers food hygiene courses as a means of compliance with these duties.

• Level 2 food hygiene 1 day course providing basic skills for food handlers
• Level 3 food hygiene 3 day course for supervisors and managers

Both courses involve taking an exam to show what you have learnt.
